Pickled Green Tomatoes

Green tomato recipes are mostly battered and fried. We pickle them for a surprising zesty addition to a sandwich or burger.

Ingredients
  

  • 2 Cups Cut Green Tomatoes Remove stems
  • 4 Cloves Garlic Peeled but Whole
  • 1/4 of an Onion Whole
  • 1 Tablespoon Sea Salt or Kosher salt
  • 1/4 Teaspoon Mustard Seed
  • 1/4 Teaspoon Fennel Seed
  • 1/8 Teaspoon Celery Seed
  • 1 Cup White Vinegar
  • Water to fill the Jar

Instructions
 

  • Wash and slice the green tomatoes and add them to a Mason jar
  • Peel and slice the onion and add it to the jar
  • Peel the garlic and add the cloves to the jar
  • Add the salt and spices
  • Add the vinegar
  • Add the water to cover the tomatoes
  • Seal the jar and shake it
  • Refrigerate for a few days these will get better over a week
  • Can keep for up to 3 weeks in the refrigerator
  • Enjoy!
