- 2 Cups of Cut Green Tomatoes (Remove stems)
- 4 Cloves of Garlic (Peeled but Whole)
- 1/4 of an Onion (Whole)
- 1 Tablespoon of Sea Salt (or Kosher salt)
- 1/4 Teaspoon of Mustard Seed
- 1/4 Teaspoon of Fennel Seed
- 1/8 Teaspoon of Celery Seed
- 1 Cup of White Vinegar
- Water to fill the Jar
Instructions
- Wash and slice the green tomatoes and add them to a Mason jar
- Peel and slice the onion and add it to the jar
- Peel the garlic and add the cloves to the jar
- Add the salt and spices
- Add the vinegar
- Add the water to cover the tomatoes
- Seal the jar and shake it
- Refrigerate for a few days these will get better over a week
- Can keep for up to 3 weeks in the refrigerator
