Ingredients
- 1Lb. of Haddock Fillets
- 1 Vine Ripe Tomato (4 slices)
- ½ of a Small Zucchini
- 2 Oz. of Shredded Cheese
- ½ of a Lemon
- ½ Cups of Water
- 1 Teaspoon of Basil (fresh or dried)
- Salt and Pepper
Instructions
- Preheat the oven to 400 degrees F.
- Place the haddock on a pan, makes sure to choose one with a lip. Sprinkle salt and pepper directly on the fish (lightly), add your tomato slices and then layer the zucchini slices on top, add a little more salt and pepper and basil.
- Squeeze ¼ lemon on the fish and add a ½ cup water to bottom on pan.
- Cook for 10 minutes, remove from oven, sprinkle cheese on top and return for another 5 – 7 minutes.
Serve with remaining lemon and steamed broccoli.
