Italian Baked Haddock


  • 1Lb. of Haddock Fillets
  • 1 Vine Ripe Tomato (4 slices)
  • ½ of a Small Zucchini
  • 2 Oz. of Shredded Cheese
  • ½ of a Lemon
  • ½ Cups of Water
  • 1 Teaspoon of Basil (fresh or dried)
  • Salt and Pepper


  1. Preheat the oven to 400 degrees F.
  2. Place the haddock on a pan, makes sure to choose one with a lip. Sprinkle salt and pepper directly on the fish (lightly),  add your tomato slices and then layer the zucchini slices on top,  add a little more salt and pepper and basil.
  3. Squeeze ¼ lemon on the fish and add a ½ cup water to bottom on pan.
  4. Cook for 10 minutes, remove from oven,  sprinkle cheese on top and return for another 5 – 7 minutes.

Serve with remaining lemon and steamed broccoli.
