Spinach Salad w Pear and Bacon

Ingredients
- 2 Cups Spinach and Arugula Mix
- 1 Piece Cooked Bacon diced
- ¼ Fresh Pear ripened and sliced thin
- 3 Cherry Tomatoes halved
- ½ oz Goat cheese
- 5 Slices Pickled Onion
Dijon Vinaigrette
- ¼ Tsp Sugar
- ¼ Tsp Dijon Mustard
- 1 Tbl. Balsamic Vinegar
- 2 Tsp. Extra Virgin Olive Oil
- Cracked Black Pepper to Taste
Instructions
- Lay spinach on a plate and sprinkle the bacon on top.
- Add the tomato, pear slices, goat cheese, and onions.
- In a small side dish, add ingredients together for the Dijon Vinaigrette dressing.
- Pour over the top of the salad.

Usually not a fan of fruit on salad but the pear with onion and goat cheese pared so well with the balsamic this salad is going on rotation for sure
