Blueberry Crumb-Top Muffins

  • 1 Cup Blueberries
  • 1 ½ Cup Flour
  • ¾ Cup Sugar
  • ½ Cup Milk (2% or Whole)
  • 2 Teaspoons of Baking Powder
  • ⅓ Cup of Vegetable Oil
  • 1 Tablespoon of Honey
  • 1 Egg
  • ½ Teaspoon of Salt

Crumb Topping:

  • ½ Cup of Sugar
  • ¼ Cup of Flour
  • 3 Tablespoons of Butter (cold)
  • 1 ½ Teaspoon of Cinnamon
  • 1/4 Teaspoon of Nutmeg

Muffin Instructions

  1. Combine the flour, baking powder, sugar and salt in a bowl.
  2. In a small bowl, mix the oil, milk, honey, and egg and slowly add to flour mixture until it’s all incorporated.
  3. Fold the blueberries into the batter, fill each muffin tin ½ full of mixture and sprinkle 1-2 Tablespoons of the crumb topping over each muffin. 
  4.  Cook at 400 degrees F for 20 minutes.

Topping Instructions
Mix all ingredients together with 2 butter knives, cutting the butter with sugar (don’t smoosh) set aside.
