Nicole AshcroftBlueberry Crumb-Top Muffins Ingredients 1 Cup Blueberries 1 ½ Cup Flour ¾ Cup Sugar ½ Cup Milk (2% or Whole) 2 Teaspoons of Baking Powder ⅓ Cup of Vegetable Oil 1 Tablespoon of Honey 1 Egg ½ Teaspoon of Salt Crumb Topping: ½ Cup of Sugar ¼ Cup of Flour 3 Tablespoons of Butter (cold) 1 ½ Teaspoon of Cinnamon 1/4 Teaspoon of Nutmeg Instructions Muffin Instructions Combine the flour, baking powder, sugar and salt in a bowl. In a small bowl, mix the oil, milk, honey, and egg and slowly add to flour mixture until it’s all incorporated. Fold the blueberries into the batter, fill each muffin tin ½ full of mixture and sprinkle 1-2 Tablespoons of the crumb topping over each muffin. Cook at 400 degrees F for 20 minutes. Topping Instructions Mix all ingredients together with 2 butter knives, cutting the butter with sugar (don’t smoosh) set aside.
