Ingredients
  

  • 2 Cups Spinach Leaves Optional add Arugula Mix
  • 1 Piece Bacon Cooked and diced
  • ¼ Pear Ripened and sliced thin
  • 3 Cherry Tomatoes Halved
  • ½ oz Goat cheese
  • 5 Slices Onion Pickled

Dijon Vinaigrette

  • ¼ Tsp Sugar
  • ¼ Tsp Dijon Mustard
  • 1 Tbs Balsamic Vinegar
  • 2 Tsp Extra Virgin Olive Oil
  • Cracked Black Pepper to Taste

Instructions
 

  • Lay spinach on a plate and sprinkle the bacon on top.
  • Add the tomato, pear slices, goat cheese, and onions.
  • In a small side dish, add ingredients together for the Dijon Vinaigrette dressing.
  • Pour over the top of the salad.

Variations: Top with walnuts for added crunch

    Usually not a fan of fruit on salad but the pear with onion and goat cheese pared so well with the balsamic this salad is going on rotation for sure
