Raspberry Lime Rickey

A cool, refreshing drink from our childhood is popular again. Mint and raspberry are the flavors and the bubbles come from the seltzer.

Equipment

  • 1 small fine mesh strainer

Ingredients
  

For The Raspberry Puree

  • 1 Cup Raspberries
  • 1/3 Cup White Sugar Monk fruit or other sweetener is fine
  • 1/3 Cup Water

For The Drinks

  • 32 Oz. Seltzer Water Soda Water or other fizzy water can be substituted
  • 3 Lime Fresh Squeezed

Instructions
 

For The Puree

  • Wash the respberries
  • Put the raspberries in a saucepan with the sugar
  • Bring to a boil
  • Cook down for 5 minutes
  • Pour through fine mesh strainer
  • Let it cool before adding it to your glass

For The Drinks

  • Add ice to a glass
  • For each drink add three teaspoons of the raspberry
  • Slice a lime and squeeze it in 3/4 to a whole lime
  • Stir gently for just 1 sec
  • Add a drinking straw to the glass and enjoy
