Blueberry Crumb Top Muffins

Elevate a plain old blueberry muffin with a sugary topping to add texture and sweetness. Warning you will never want a plain muffin again.

Ingredients
  

Muffins

  • 1 Cup Blueberries
  • 1 ½ Cup Flour
  • ¾ Cup Sugar
  • ½ Cup Milk 2% or Whole
  • 2 Tsp Baking Powder
  • Cup Vegetable Oil
  • 1 Tbs Honey
  • 1 Egg
  • ½ Teaspoon Salt

Crumb Topping

  • ½ Cup Sugar
  • ¼ Cup Flour
  • 3 Tbs Butter cold
  • 1 ½ Tsp Cinnamon
  • 1/4 Tsp Nutmeg

Instructions
 

Muffin Instructions

  • Combine the flour, baking powder, sugar and salt in a bowl.
  • In a small bowl, mix the oil, milk, honey, and egg and slowly add to flour mixture until it’s all incorporated.
  • Fold the blueberries into the batter
  • Fill each muffin tin ½ full of mixture

Topping Instructions

  • Mix all ingredients together with 2 butter knives, cutting the butter with sugar (don’t smoosh) set aside.
  • Sprinkle 1-2 Tablespoons of the crumb topping over each muffin.
  • Cook at 400 degrees F for 20 minutes.
