Blueberry Crumb Top Muffins

Ingredients
Muffins
- 1 Cup Blueberries
- 1 ½ Cup Flour
- ¾ Cup Sugar
- ½ Cup Milk 2% or Whole
- 2 Tsp Baking Powder
- ⅓ Cup Vegetable Oil
- 1 Tbs Honey
- 1 Egg
- ½ Teaspoon Salt
Crumb Topping
- ½ Cup Sugar
- ¼ Cup Flour
- 3 Tbs Butter cold
- 1 ½ Tsp Cinnamon
- 1/4 Tsp Nutmeg
Instructions
Muffin Instructions
- Combine the flour, baking powder, sugar and salt in a bowl.
- In a small bowl, mix the oil, milk, honey, and egg and slowly add to flour mixture until it’s all incorporated.
- Fold the blueberries into the batter
- Fill each muffin tin ½ full of mixture
Topping Instructions
- Mix all ingredients together with 2 butter knives, cutting the butter with sugar (don’t smoosh) set aside.
- Sprinkle 1-2 Tablespoons of the crumb topping over each muffin.
- Cook at 400 degrees F for 20 minutes.
