Asparagus Roll Ups

These have been one of our go-to recipes for a long time. The asparagus is the star and the rest of the ingredients add flavor and crunch. Once you make these you will want to add them to your appetizer repertoire. Everyone who has ever tasted them loves them!

Equipment

  • 2 Baking Sheets
  • 1 Rolling Pin
  • 1 Chef Knife

Ingredients
  

  • 15 Slices White Bread Can also use wheat bread
  • 45 Spears Asparagus 3 spears ea unless thick then add 1 or 2 spears
  • 8 oz. Cream Cheese
  • 8 Slices Cooked Bacon crumbled
  • 1/4 Teaspoon Garlic Powder
  • 1/4 Teaspoon Chives
  • 1/4 Teaspoon Lemon Juice
  • Lemon Zest Optional
  • 1 Tablespoon Table Salt
  • Paprika for Sprinkling
  • 1 Tbsp Olive oil
  • 1 Tbsp Grated Cheese

Instructions
 

  • Leave the cream cheese on the counter for one hour. 8 oz. Cream Cheese

  • Wash, dry and trim asparagus spears and set aside.45 Spears Asparagus

  • Cut the crust of the bread slices and set aside.15 Slices White Bread

  • Mix the cream cheese and bacon together with the lemon juice and zest (optional) chives and garlic powder. 8 oz. Cream Cheese
    8 oz. Cream Cheese, 8 Slices Cooked Bacon, 1/4 Teaspoon Garlic Powder, 1/4 Teaspoon Chives, 1/4 Teaspoon Lemon Juice, Lemon Zest
  • Sprinkle some of the salt on a cutting board and place a few slices of bread over it and roll until it is flat. You may need to turn it over and roll on the other side depending on the bread.1 Tablespoon Table Salt

  • Carefully spoon some of the cream cheese mixture onto the bread, add 2 -3 asparagus spears and fold the bread into a triangle. or You can cut the bread into strips and wrap around the asparagus bundles like a belt.
  • Drizzle with olive oil 1 Tbsp Olive oil

  • Sprinkle the paprika Paprika for Sprinkling

  • Add a little grated cheese on top 1 Tbsp Grated Cheese

  • Bake at 375 F for 15 -20 minutes until golden. Watch it because it can burn easily baking time varies with bread types

Pro Tip: If you want your asparagus to stay bright green simply microwave the spears for 60 seconds and then plunge into a bowl full of ice water,
