Raspberry Lime Rickey
A cool, refreshing drink from our childhood is popular again. Mint and raspberry are the flavors and the bubbles come from the seltzer.

Equipment
- 1 small fine mesh strainer
Ingredients
For The Raspberry Puree
- 1 Cup Raspberries
- 1/3 Cup White Sugar Monk fruit or other sweetener is fine
- 1/3 Cup Water
For The Drinks
- 32 Oz. Seltzer Water Soda Water or other fizzy water can be substituted
- 3 Lime Fresh Squeezed
Instructions
For The Puree
- Wash the respberries
- Put the raspberries in a saucepan with the sugar
- Bring to a boil
- Cook down for 5 minutes
- Pour through fine mesh strainer
- Let it cool before adding it to your glass
For The Drinks
- Add ice to a glass
- For each drink add three teaspoons of the raspberry
- Slice a lime and squeeze it in 3/4 to a whole lime
- Stir gently for just 1 sec
- Add a drinking straw to the glass and enjoy
