Flavor Bomb Chunky Mexican Chicken Salad

This salad is a flavor bomb. Large tender pieces of chicken that are satisfying, with a substantial texture. Combined with flavors of chili and spice that will tantalize your tongue. Peppers add contrast to the black beans and greens. Topped with avocado, cheese, and salsa this is like a Healthier Taco Tuesday Meal.

Ingredients
  

  • 1/2 Cup Chicken Breast
  • 1 Tbsp Olive Oil
  • 1/4 Tsp Salt
  • 1/2 Tsp Chili Powder
  • 1/4 Tsp Cumin
  • 1/8 Tsp Cayenne Pepper
  • 1/4 Cup Poblano Pepper
  • 1 Tbsp Jalapeno Pepper
  • 1/4 Cup Onions
  • 1/4 Cup Black Beans
  • 1/8 Cup Cheddar Cheese
  • 1/8 Cup Salsa
  • 1/2 Cup Lettuce
  • 1/4 Tbs Sour Cream
  • 1/4 ea Lime
  • 1/4 Cup Avocado
  • 1/2 Tbs Cilantro

Instructions
 

  • Wash your lettuce, peppers, avocado, and lime and set aside to dry
  • Turn on your skillet to medium high heat
  • Add the Tablespoon of olive oil
  • Test the heat of the pan by dropping a few droplets of water to make sure the pan is hot enough
  • Add your 1/2 cup chicken
  • Once the chicken starts to cook
  • Add the 1/4 teaspoon of salt
  • Keep moving the chicken in the pan for even browning
  • Once the chicken starts to brown a little
  • Add the 1/2 teaspoon of chili powder and stir
  • Add the 1/4 teaspoon of cumin and stir
  • Add the 1/8 of a teaspoon of cayenne pepper and stir
  • While the chicken is cooking chop your 1/4 cup of onion 1/4 cup of poblano peppers and the tablespoon of jalapeno pepper
  • Add them to the pan with the chicken
  • Once your peppers and onions are glistening take the temperature of your largest piece of chicken- Chicken needs to have an internal temperature of at least 165 degrees F .
  • Now its time to assemble the salad, starting with the 1/2 cup of lettuce
  • Next add the 1/4 cup of black beans
  • Add the 1/8 of cup of cheddar cheese
  • Add the 1/4 tablespoon of sour cream
  • Slice the 1/4 cup of avocado and add it
  • Add the 1/8 cup of salsa
  • Minced the 1/2 tablespoon of cilantro
  • squeeze a 1/4 of the lime on top of the salad
