Ingredients
- 2 ea Zucchini Sliced
- 2 ea Yellow Summer Squash Sliced
- 2 ea Eggplan Sliced
- 1 cup Marinara / Tomato Sauce Our recipe is linked below
- 1/2 tsp Red Pepper Flake
- 2 tbsp Olive Oil
- 1/2 cup Parmesan Cheese freshly grated
- Salt and Pepper to Taste
Instructions
- Slice your vegetables and lay flat on paper towel
- Drizzle with olive oil and sprinkle salt and pepper over the slices
Pre-heat oven to 400 degrees
- In cast iron pan add marinara to bottom and stir in pepper flakes
- Layer the vegetables on top of each other rotating zucchini, yellow squash and eggplant and then transfer a small stack to the cast iron pan. On top of the sauce then your able to fan them out a little.
- Once pan is full crack black pepper over the top and sprinkle parmesan cheese'
- Roast in oven for 30-35 min cover with foil for 15 min and last 15 min uncovered
