Ratatouille

Ratatouille is a classic French vegetable dish that celebrates fresh, seasonal produce. The vegetables can be cut into cubes or thin slices and layered for a visually appealing presentation.

Ingredients
  

  • 2 ea Zucchini Sliced
  • 2 ea Yellow Summer Squash Sliced
  • 2 ea Eggplan Sliced
  • 1 cup Marinara / Tomato Sauce Our recipe is linked below
  • 1/2 tsp Red Pepper Flake
  • 2 tbsp Olive Oil
  • 1/2 cup Parmesan Cheese freshly grated
  • Salt and Pepper to Taste

Instructions
 

  • Slice your vegetables and lay flat on paper towel
  • Drizzle with olive oil and sprinkle salt and pepper over the slices

Pre-heat oven to 400 degrees

  • In cast iron pan add marinara to bottom and stir in pepper flakes
  • Layer the vegetables on top of each other rotating zucchini, yellow squash and eggplant and then transfer a small stack to the cast iron pan. On top of the sauce then your able to fan them out a little.
  • Once pan is full crack black pepper over the top and sprinkle parmesan cheese'
  • Roast in oven for 30-35 min cover with foil for 15 min and last 15 min uncovered
