Ratatouille
Ratatouille is a classic French vegetable dish that celebrates fresh, seasonal produce. The vegetables can be cut into cubes or thin slices and layered for a visually appealing presentation.

- 2 ea Zucchini Sliced
- 2 ea Yellow Summer Squash Sliced
- 2 ea Eggplan Sliced
- 1 cup Marinara / Tomato Sauce Our recipe is linked below
- 1/2 tsp Red Pepper Flake
- 2 tbsp Olive Oil
- 1/2 cup Parmesan Cheese freshly grated
- Salt and Pepper to Taste
Pre-heat oven to 400 degrees
In cast iron pan add marinara to bottom and stir in pepper flakes
Layer the vegetables on top of each other rotating zucchini, yellow squash and eggplant and then transfer a small stack to the cast iron pan. On top of the sauce then your able to fan them out a little.
Once pan is full crack black pepper over the top and sprinkle parmesan cheese'
Roast in oven for 30-35 min cover with foil for 15 min and last 15 min uncovered
Served perfect with fish or chicken
