- 1 Whisk
- 1 Cruet
Ingredients
- 1/4 Cup Apple Cider Vinegar
- 3/4 Cup Pumpkin
- 1/4 Cup Olive Oil
- 1/2 Cup Water
- 1 Clove Garlic
- 1/2 Lemon Juice and Zest
- 3 Tbs Green Onion
- 1 Teaspoon Ginger Root
- 2 Tbsp Maple Syrup
- 1 Tsp Ground Cinnamon
- Salt and Pepper to Taste
Instructions
- Place the pumpkin in a medium bowl
- Pour the oil and vinegar
- Mince the garlic, ginger
- Zest the lemon
- Squeeze the lemon juice into the pumpkin mixture
- Add the garlic, ginger, and lemon zest
- Add the cinnamon and maple syrup
- Whisk it together and add the green onion
- Add the water(If your dressing is still too thick simply add a little more water 1 Tbs at a time)
- Whisk it all together
- Pour into a cruet
- Pour over your salad
