For The Fritters

  • 1 Pineapple
  • 1 Cup Flour
  • 1/4 Cup Sugar
  • 1 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1 Cup Chilled plain seltzer water

For The Coconut Cream Sauce

  • 1/2 Cup Cream of Coconut
  • 1/8 Cup Stevia You may use your favorite sweetener
  • 1/4 Tsp Vanilla Extract
  • Pinch of salt

Instructions
 

Prepare The Pineapple

  • Wash the pineapple,
  • Holding the leaves slice the bottom and them the top off
  • Peel the pineapple making sure to remove all the spines
  • Slice the pineapple into rings about 1/4 inch thick
  • Using a cookie cutter core the pineapple slices by pressing on them

The Batter

  • Whisk together in a bowl the flour, sugar, salt, and baking powder
  • Add in the cold seltzer water
  • Whisk out any lumps

Making Fritters

  • Pour your oil into a pot with high sides Place a thermometer to monitor temp
  • Bring oil temp to at least 325 F you may cook at a temp of up to 350 F
  • While the oil is heating place your pineapple rings into the bowl of batter, move them around and flip to ensure they are completely coated
  • Drop them into the hot oil and watch for the color- this should not take any more than 5 minutes before you need to flip them- cook for another 3 minutes or until golden brown
  • Remove to a wire rack with a cookie sheet lined with paper towel to cool

The Coconut Cream Sauce

  • In a small bowl add in the coconut cream, the stevia, the vanilla extract, and the pinch of salt.
  • Whisk it together and it is ready to taste
