Ingredients
For The Fritters
- 1 Pineapple
- 1 Cup Flour
- 1/4 Cup Sugar
- 1 Tsp Baking Powder
- 1/2 Tsp Salt
- 1 Cup Chilled plain seltzer water
For The Coconut Cream Sauce
- 1/2 Cup Cream of Coconut
- 1/8 Cup Stevia You may use your favorite sweetener
- 1/4 Tsp Vanilla Extract
- Pinch of salt
Instructions
Prepare The Pineapple
- Wash the pineapple,
- Holding the leaves slice the bottom and them the top off
- Peel the pineapple making sure to remove all the spines
- Slice the pineapple into rings about 1/4 inch thick
- Using a cookie cutter core the pineapple slices by pressing on them
The Batter
- Whisk together in a bowl the flour, sugar, salt, and baking powder
- Add in the cold seltzer water
- Whisk out any lumps
Making Fritters
- Pour your oil into a pot with high sides Place a thermometer to monitor temp
- Bring oil temp to at least 325 F you may cook at a temp of up to 350 F
- While the oil is heating place your pineapple rings into the bowl of batter, move them around and flip to ensure they are completely coated
- Drop them into the hot oil and watch for the color- this should not take any more than 5 minutes before you need to flip them- cook for another 3 minutes or until golden brown
- Remove to a wire rack with a cookie sheet lined with paper towel to cool
The Coconut Cream Sauce
- In a small bowl add in the coconut cream, the stevia, the vanilla extract, and the pinch of salt.
- Whisk it together and it is ready to taste
