For The Fritters
- 1 Pineapple
- 1 Cup Flour
- 1/4 Cup Sugar
- 1 Tsp Baking Powder
- 1/2 Tsp Salt
- 1 Cup Chilled plain seltzer water
For The Coconut Cream Sauce
- 1/2 Cup Cream of Coconut
- 1/8 Cup Stevia You may use your favorite sweetener
- 1/4 Tsp Vanilla Extract
- Pinch of salt
Prepare The Pineapple
Wash the pineapple,
Holding the leaves slice the bottom and them the top off
Peel the pineapple making sure to remove all the spines
Slice the pineapple into rings about 1/4 inch thick
Using a cookie cutter core the pineapple slices by pressing on them
The Batter
Whisk together in a bowl the flour, sugar, salt, and baking powder
Add in the cold seltzer water
Whisk out any lumps
Making Fritters
Pour your oil into a pot with high sides Place a thermometer to monitor temp
Bring oil temp to at least 325 F you may cook at a temp of up to 350 F
While the oil is heating place your pineapple rings into the bowl of batter, move them around and flip to ensure they are completely coated
Drop them into the hot oil and watch for the color- this should not take any more than 5 minutes before you need to flip them- cook for another 3 minutes or until golden brown
Remove to a wire rack with a cookie sheet lined with paper towel to cool
The Coconut Cream Sauce
In a small bowl add in the coconut cream, the stevia, the vanilla extract, and the pinch of salt.
Whisk it together and it is ready to taste
