Ingredients
  

  • 4.5 Lb Chicken Whole cut into pieces (legs, thighs, wings, and breasts)
  • 4 Potatoes medium quartered
  • 3 cups Vegetables Fresh assorted e.g., bell peppers, zucchini, carrots, onions
  • 28 Ounces Tomatoes canned
  • 5 Garlic cloves minced
  • 1.5 Tbsp Italian Seasoning
  • 3.5 Tbsp Olive Oil
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 350°F (200°C).
  • In the same pan you are cooking in toss the potatoes and assorted vegetables with minced garlic, olive oil, and your choice of Italian herbs. Season generously with salt and pepper.
  • Arrange the chicken pieces in a single layer on a large baking sheet or roasting pan. Surround the chicken with the seasoned potatoes and vegetables.
  • Drizzle the chicken and vegetables with a little extra olive oil and season with more salt, pepper, and Italian herbs.
  • Pour the canned tomatoes over the top
  • Roast everything in the preheated oven for 60 minutes, or until the chicken is fully cooked to at least 165 F, and the vegetables are tender.
  • Serve hot and enjoy the perfect combination of savory tomato, flavorful chicken, roasted veggies, and hearty potatoes.
