In the same pan you are cooking in toss the potatoes and assorted vegetables with minced garlic, olive oil, and your choice of Italian herbs. Season generously with salt and pepper.
Arrange the chicken pieces in a single layer on a large baking sheet or roasting pan. Surround the chicken with the seasoned potatoes and vegetables.
Drizzle the chicken and vegetables with a little extra olive oil and season with more salt, pepper, and Italian herbs.
Pour the canned tomatoes over the top
Roast everything in the preheated oven for 60 minutes, or until the chicken is fully cooked to at least 165 F, and the vegetables are tender.
