Chinese Inspired Fried Rice w Jack Fruit

Ingredients
  

  • 1 Cup White Rice Pre cooked
  • 1 Cup Brown Rice Pre cooked
  • 1 Tbs Olive Oil
  • 1 Onion
  • 2 Carrot
  • 1 Cup Peas
  • 1/4 Cup Cabbage
  • 1 Tbsp Ginger Root
  • 2 Cloves Garlic
  • 3 Green Onion
  • 1 Cup Jack Fruit
  • 1 Tbs Low Sodium Soy Sauce
  • 1 Tsp Sesame Oil
  • 1 Tsp Red Pepper Flake

Instructions
 

  • Cook your rice at least 1 hour ahead as directed and place into the refrigerator to cool.
  • If using canned Jack Fruit, drain it 1st
    For frozen shred it using your hands or a fork. If there are any tough parts, chop them finely
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
  • Add the minced garlic, grated ginger, and diced onion. Sauté until fragrant and the onion becomes translucent, about 2-3 minutes.Add the diced carrot and cook for another 2 minutes until slightly tender.
  • Push the vegetables to one side of the skillet. Add the remaining tablespoon of oil to the other side. Add the shredded jackfruit to the skillet and stir-fry it for 3-4 minutes until it begins to brown slightly
  • Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir everything together to combine the rice with the vegetables and jackfruit.
  • Pour the soy sauce, oyster sauce (if using), and sesame oil over the rice mixture. Stir well to ensure the rice is evenly coated.
  • Add the frozen peas and cook for another 2 minutes until the peas are heated through.Season with salt and pepper to taste.If using, scramble an egg in a separate pan and mix it into the fried rice.
  • Stir in the chopped green onions.
  • Serve hot, garnished with extra green onions or sesame seeds if desired.

Notes

When selecting fresh Jack fruit make sure you do not get Durian. Durian skin is similar looking with a spiked texture. However Durian is more prickly than Jack fruit. They taste and SMELL completely different.
