Chicken Salad Stuffed Tomato
This stuffed tomato not only looks fun to eat it tastes delicious! What a great way not to get bored with your chicken salad. If you made the salad ahead of time or even prepared some of the ingredients earlier in the week this is a snap to assemble.

Ingredients
- 1/2 Cup Chicken
- 1.5 Tbsp Mayonnaise
- 1.2 Tbsp Tarragon
- 1/4 Tsp Dijon Mustard
- 1 Tomato large
- 1.5 Tbsp Celery
- 2 Tsp Pecans
- 1/4 Cup Grapes
Instructions
- Use Pre-cooked chicken or cook chicken to 165 degrees F prior to assembling
- Wash the grapes
- Wash the tomato
- Place on a paper towel over a towel or dish mat to dry
- Add the pre-cooked chicken to a mixing bowl
- Wash and chop the celery
- Quarter the grapes
- Crush up the pecans using a plastic bag and a hard object like a wine bottle or a rolling pin
- Add the celery
- Add the grapes to the mixing bowl with the chicken
- Add the nuts
- Add the mayonnaise
- Add the tarragon
- Add the Dijon mustard
- Mix together
- Add salt and pepper to taste
