Field Pea Salad

This is a beautiful salad! It tastes as amazing as it looks. Simple but elegant with the little flowers from the field peas. Perfect for a luncheon, tea, bridal shower or any time you want to make a great impression on your guests. The champagne dressing goes well with the salad and reads nicely on a printed menu.

Ingredients
  

The Salad

  • 4 Ounces Field Pea Micro Greens
  • 2-3 Radishes chopped
  • 1 Summer Squash Small/chopped
  • 1/2 Red Onion Small/Sliced thin

Champagne Vinaigrette

  • 1 Garlic clove finely chopped
  • 2 Tablespoons Dijon Mustard
  • 1/4 Cup Champagne Vinegar
  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Honey
  • 2 Dashes Hot Sauce
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Ground Black Pepper
  • 1/4 Cup Extra Virgin Olive Oil

Instructions
 

The Vinaigrette

  • Whisk all the ingredients together

The Salad

  • Add all ingredients to a bowl and lightly toss with the champagne vinaigrette
