Ingredients
- 16 Ounces of Fresh Field Pea Greens (you can find these at most farmer’s markets)
- 2-3 Radishes (chopped)
- 1 Small Summer Squash (chopped)
- 1/2 Small Red Onion (Sliced thin)
Champagne Vinaigrette Recipe
- 1 Garlic clove (finely chopped)
- 2 Tablespoons of Dijon Mustard
- 1/4 Cup of Champagne Vinegar
- 2 Tablespoons of Fresh Lemon Juice
- 2 Tablespoons of Honey
- 2 or 3 Dashes of Hot Sauce
- 1/2 Teaspoon of Salt
- 1/2 Teaspoon of Freshly Ground Black Pepper
- 1/2 Cup of Extra Virgin Olive Oil
Instructions
Add all ingredients to a bowl and lightly toss with the champagne vinaigrette.
