Ingredients
- 10 oz Riced Cauliflower Frozen or Fresh
- 2 Ea Eggs
- 1/2 Ea Bell Pepper Minced
- 1/2 Ea Red Onion Minced
- 1/2 Cup Carrot Minced
- 2 Ea Garlic Cloves Minced
- 1/2 Tsp Ginger Grated
- 1 Tbsp Soy Sauce
- 1 Tbsp Milled Flax Seed Optional
- 1 Tsp Pepper
- 2 Ea Green Onion
- 1 Tsp Coconut Oil
- 1/2 Tsp Sesame Oil
Instructions
- Rinse cauliflower rice in water, drain in a colander and pat dry with paper towel
- In a frying pan on high heat add coconut oil and add onion, carrot and pepper to pan and saute for 2 minutes
- Add garlic, ginger and continue to saute for another 2 minutes ensuring garlic does NOT burn
- Mix all together and add the riced cauliflower, cook for 5 minutes
- Push veggies to the side of the pan and crack the 2 eggs and scramble in the pan
- Finish with Soy, Sesame Oil and Scallions
