Ingredients
  

  • 10 oz Riced Cauliflower Frozen or Fresh
  • 2 Ea Eggs
  • 1/2 Ea Bell Pepper Minced
  • 1/2 Ea Red Onion Minced
  • 1/2 Cup Carrot Minced
  • 2 Ea Garlic Cloves Minced
  • 1/2 Tsp Ginger Grated
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Milled Flax Seed Optional
  • 1 Tsp Pepper
  • 2 Ea Green Onion
  • 1 Tsp Coconut Oil
  • 1/2 Tsp Sesame Oil

Instructions
 

  • Rinse cauliflower rice in water, drain in a colander and pat dry with paper towel
  • In a frying pan on high heat add coconut oil and add onion, carrot and pepper to pan and saute for 2 minutes
  • Add garlic, ginger and continue to saute for another 2 minutes ensuring garlic does NOT burn
  • Mix all together and add the riced cauliflower, cook for 5 minutes
  • Push veggies to the side of the pan and crack the 2 eggs and scramble in the pan
  • Finish with Soy, Sesame Oil and Scallions
