10ozRiced CauliflowerFrozen or Fresh
2EaEggs
1/2 EaBell PepperMinced
1/2EaRed OnionMinced
1/2CupCarrotMinced
2EaGarlic ClovesMinced
1/2TspGingerGrated
1TbspSoy Sauce
1TbspMilled Flax SeedOptional
1TspPepper
2EaGreen Onion
1TspCoconut Oil

Instructions
Rinse cauliflower rice in water, drain in a colander and pat dry with paper towel
In a frying pan on high heat add coconut oil and add onion, carrot and pepper to pan and saute for 2 minutes
Add garlic, ginger and continue to saute for another 2 minutes ensuring garlic does NOT burn
Mix all together and add the riced cauliflower, cook for 5 minutes
Push veggies to the side of the pan and crack the 2 eggs and scramble in the pan
