- 1 Replacement Seal For Instant Pot
Ingredients
- 32 Oz Collard Greens Bagged, Washed, Stipped from the stem and ribs removed
- ¼ Tsp Baking Soda
- 2 Smoked Ham Hocks Smaller or 1 large
- 1 Qt Chicken Stock
- 2 Cloves Garlic
- 1 Onion
- 2 Tbs Olive Oil
- 1 Tbs Red Pepper Flake
- ⅓ Cup Apple Cider Vinegar
- 1-2 Tbs Sugar
Instructions
- Soak the greens overnight in water and baking soda, rinse well.
- Brown the ham hock in the oil.
- Chop the garlic and the onion
- Add the onions and garlic when the meat is browned.
- Add in all the rest of the ingredients.
- Set the Insta-pot to pressure cook for 60 minutes.
- Release the pressure when indicated.
- Remove greens from the pot.
- Reserve the liquid in the bottom, this is called Pot Liquor and can be used to flavor other dishes like black-eyed peas.
- Serve the greens with a side of apple cider vinegar
Notes
Notes: The InstantPot is a time saver and keeps the flavor of the collards in tact which you may loose in a standard pot with lid.
Be aware that you will have to give the InstantPot a good cleaning after and maybe change the rubber seal as the smell of the collards lingers in the pot.
