Crunchy Chicken Taquitos

Crispy, cheesy and fun for a Cinco de Mayo party or anytime appetizer. If you have pre-shredded chicken breast these come together in 10 minutes.

Equipment

Ingredients
  

  • 1 Tsp Chicken Bouillon
  • 1/2 Tsp Onion Powder
  • 1/2 Tsp Garlic Powder
  • 1/4 Tsp Cumin
  • 1/2 Tsp Smoked Paprika
  • Salt and Pepper to taste
  • 2 Cups Chicken Breast
  • 1.5 Cup Monterey Jack Cheese Shredded
  • 12 Corn Tortillas
  • 2 Tbsp Flour
  • 1 Tbsp Water
  • 2 Cups Vegetable Oil

Instructions
 

  • Mix all dry ingredients except flour together in a bowl
  • Mix shredded chicken, cheese and dry ingredients
  • Mix flour and water together in a small bowl to make a paste
  • Lay one corn tortilla out and scoop 2 Tsp of filling and roll up leaving 1" at top
  • Brush thin layer of the flour paste on 1" of top to finishing rolling taquito this helps to seal and keep closed while cooking.
  • Heat oil in pan on medium high heat
  • Fry the taquitos until golden brown approx 2-3 min

Notes

If you want to make them spicy you can add chili or cayenne pepper to the dry ingredients.
Serve with sour cream and lime and chopped cilantro
Can be rolled and placed in the freezer until you are ready to cook.
(Recipe includes oil for frying however this is not calculated in the overall calories) If you plan to deep fry for taste double the calories. 
You may opt to air fry the Taquitos instead
