Ingredients

  • 10 Oz Spinach Frozen
  • 6 Oz Stuffing Mix I used Stove Top but store brand is fine.
  • 1/2 Cup Parmesan Cheese Grated
  • 1/2 Tsp Garlic Powder
  • 1/2 Cup Butter Melted
  • 5 Eggs
  • Pepper and Salt to Taste

Instructions

  • Start by defrosting some frozen spinach in a colander, run cool water over it until it is melted enough to squeeze
  • Pre-heat the Oven to 350 F
  • Squeeze as much water as you can out of it and add it to a bowl
  • Melt the butter and allow it to cool a bit. You do not want it to cook your eggs
  • Add the stuffing mix
  • Add the cheese
  • Add the Eggs
  • Add the spices
  • Mix it all together and form little balls the size of small meatballs
  • Cook 20-25 minutes, depending on the size of your balls

Notes

Suggestions:
You an add in peppers for color 
You can also top with a pecan as shown in the cover photo 
Serve with our Dijon Mustard Sauce
