Turkey Breakfast Burrito
We made our lovely little bundles of tasty goodness with turkey because we had it on hand, however this recipe would work with just veggies or chorizo , sausage, ham or bacon. Give it a try!

Ingredients
- 1/2 Lb Ground Turkey
- 3 Eggs
- 6 Flour Tortillas medium
- 1/2 Cup Bell Pepper
- 1/2 Cup Onion
- 1/4 Cup Black Beans optional
- 3/4 Cup Shredded Cheddar
- 1/4 Tsp Salt
- 1/4 Tsp Cumin
- 1/4 Tsp Garlic Powder
- 1 Tbsp Vegetable Oil
Instructions
- Wash your peppers
- Rough chop your onions and peppers
- Heat a pan to medium high
- Add a little oil to your pan
- Add the ground turkey meat
- Cook for a couple of minutes until you do not see any pink, then add in the peppers, onion and black beans
- Mix in an move the mixture around to create a Sofrito like sauce
- Once you have the meat browned all the way through and your peppers and onions are soft remove the meat and veggie mixture to another bowl and set aside.
- Wipe out the pan thoroughly and add a 1/2 tablespoon of the oil to the pan over a med low heat
- Whisk your eggs in a bowl with the salt and add them to the warm pan
- Using your rubber spatula scrambled the eggs to a light consistency, do not overcook the eggs.
- Remove the eggs to a separate bowl and set aside
- Clean the frying pan of any cooked egg, and dry with a paper towel
- Place 1/2 Tablespoon of oil into the pan over medium high heat
- Place a flour tortilla on a plate and spoon a bit of the turkey and vegetable mixture in the center
- Add some of the scrambled egg
- Add some cheese
- Roll the burritos by folding the short edges and then the longer edges and while pulling towards you to tuck and press.
- Once you pan is hot you can add the burritos
- Cook on each side for approximately 1 and a half to 2 minutes until lightly browned
- Serve with salsa, sour cream and or guacamole
