Healthy Pasta with Chicken Sausage

Ingredients
- 6 Oz Chick Pea Penne
- 12 Oz Chicken Sausage
- 1 Cup Grape Tomatoes
- 1/2 Cup Feta cheese
- ½ Cup Red Onion Chopped
- 3 Cloves Garlic Minced
- 1 Tsp Chicken Bouillon Powder
- 1 Tsp Oregano
- 1/4 Cup Fresh Basil
- ½ Cup Half and Half
- 8 Oz Baby Spinach
- 1 Tsp Extra Virgin Olive Oil
- Salt & Pepper to Taste
Instructions
- Cook chickpea pasta until al dente
- Slice the uncooked chicken sausages into bit sized pieces
- In fry pan on Med-High heat add olive oil, chicken sausage and diced onion, cook until golden brown then remove from pan and place to the side.
- In same pan and temperature add tomatoes, garlic and oregano and cook for 3-4 minutes until tomatoes start to blister, reduce heat to medium and add feta cheese, heavy cream, basil & chicken bullion mix until incorporated.
- Add sausage and onion mixture back in pan with full bag of baby spinach.
- Cook until spinach is wilted, 1 minute then season with salt and pepper to taste.
- Add cooked chickpea pasta and mix gently, continue to cook on medium for 2-3 minutes so the pasta has time to absorb all the flavors.
- Add more fresh basil and seasoning to taste
