Ingredients
6OzChick Pea Penne
12OzChicken Sausage
1CupGrape Tomatoes
1/2CupFeta cheese
½CupRed OnionChopped
3ClovesGarlic Minced
1TspChicken Bouillon Powder
1TspOregano
1/4CupFresh Basil
½CupHalf and Half
8OzBaby Spinach
1TspExtra Virgin Olive Oil
Salt & Pepper to Taste
Instructions
Cook chickpea pasta until al dente
Slice the uncooked chicken sausages into bit sized pieces
In fry pan on Med-High heat add olive oil, chicken sausage and diced onion, cook until golden brown then remove from pan and place to the side.
In same pan and temperature add tomatoes, garlic and oregano and cook for 3-4 minutes until tomatoes start to blister, reduce heat to medium and add feta cheese, heavy cream, basil & chicken bullion mix until incorporated.
Add sausage and onion mixture back in pan with full bag of baby spinach.
Cook until spinach is wilted, 1 minute then season with salt and pepper to taste.
Add cooked chickpea pasta and mix gently, continue to cook on medium for 2-3 minutes so the pasta has time to absorb all the flavors.
Add more fresh basil and seasoning to taste
Notes
Serve with crumbed feta and fresh basil sprigs on top
