Clover Club Cocktail

Raspberry, gin, and foamy top what else could you ask for in a fancy cocktail? This quickly became my go to cocktail. I plan to serve it at my next party.

Equipment

  • 1 Sous Vide

Ingredients
  

To Make The Raspberry Infusion

  • Raspberries 22 Raspberries approximately (75 grams) and add 7.5 Oz of simple syrup

The Cocktail

  • 1.5 Oz Gin
  • 1/2 Oz Dry Vermouth
  • 3/4 Oz Simple Syrup Your The Raspberry Infusion
  • 1/2 Oz Lemon Juice
  • 1 Egg White Or Free Foam Optional

Instructions
 

To Make The Raspberry Infusion

  • Sous Vide at 135 F for 2 hours
  • Drop the bag into an ice bath to chill
  • Strain

To Make The Cocktail

  • Fill the cocktail shaker with ice
  • Add the gin
  • Add the raspberry simple syrup
  • Add the dry vermouth
  • Add the fresh lemon juice
  • Shake vigorously
  • Next comes the egg white and you have options if you are using an egg separate the yolk away from the egg you only need the white. If using liquid foam you skip this step
  • This is what the liquid foam looks like (we prefer the egg white)
  • Strain the ice out add the egg white shake and pour
  • Garnish with a couple of raspberries dipped in sugar on a toothpick and or a lemon peel
