Terrific Tzatziki

This is a fabulous accompaniment to falafel, grape leaves, lamb, burgers and more. We like to sometimes dip pita bread into it as an appetizer.

Ingredients

  • Cup Plain Greek Yogurt
  • ¼ English Cucumber
  • 1 Clove Garlic minced
  • 1 Tablespoon Lemon Juice
  • 1/2 Tablespoon Dill Fresh
  • ½ Tablespoon Parsley Fresh
  • ¼ Teaspoon Cumin
  • ¼ Teaspoon Coriander
  • Teaspoon Cayenne Pepper
  • Salt and Pepper to Taste

Instructions

  • Grate the cucumber with a box shredder
  • Take the grated cucumber, put into a towel (use a clean tea towel or several paper towels) and squeeze as much of the juice from it that you can
  • In the food processor, combine the already minced garlic, parsley, dill, lemon juice and other seasonings.
  • In a bowl, combine all ingredients above and mix..taste then and add salt and pepper.
  • Refrigerate for least 1 hour before serving to allow the flavors to set
