Terrific Tzatziki
This is a fabulous accompaniment to falafel, grape leaves, lamb, burgers and more. We like to sometimes dip pita bread into it as an appetizer.

- Cup Plain Greek Yogurt
- ¼ English Cucumber
- 1 Clove Garlic minced
- 1 Tablespoon Lemon Juice
- 1/2 Tablespoon Dill Fresh
- ½ Tablespoon Parsley Fresh
- ¼ Teaspoon Cumin
- ¼ Teaspoon Coriander
- ⅛ Teaspoon Cayenne Pepper
- Salt and Pepper to Taste
Grate the cucumber with a box shredder
Take the grated cucumber, put into a towel (use a clean tea towel or several paper towels) and squeeze as much of the juice from it that you can
In the food processor, combine the already minced garlic, parsley, dill, lemon juice and other seasonings.
In a bowl, combine all ingredients above and mix..taste then and add salt and pepper.
Refrigerate for least 1 hour before serving to allow the flavors to set
