Preheat oven to 450 F
Prepare a sheet pan by lining it with a silicone pad
Flour a baking mat or baking board
Sift the flour (optional)
Whisk in to the flour the baking powder, baking soda and salt
Pour the buttermilk into the dry ingredients
Add the lard
Mix together with a spatula and then use your hands ( Do not over mix) only mix until you have all the ingredients incorporated and you can pick up the dough like a ball.
Lay onto the floured baking mat or board and flatten with your hands or a rolling pin to a inch to and inch and a half thick
Use a biscuit cutter if you want round biscuits or you can cut into squares
Place on the baking tray leaving room in between them so that they will crisp up around the edges
Brush the tops with a little buttermilk
Place the tray of biscuits on the top rack of the oven
Bake for 15 minutes keeping a close eye on them at the 12 minute mark- if they are getting dark on the bottoms remove them
