Southern Style Biscuits

If you want those southern style biscuits you have to use lard. This is the secret taught to me by Miss Lily a frequent visitor of Vivian Howards show on PBS called A Chef's Life. I was lucky enough to have cooked biscuits with them both in their home town of Kinston NC.
Make these and freeze them for later like I did for this country ham biscuit- A fantastic Southern breakfast sandwich served with homemade apple butter.

Ingredients

  • 2 Tbsp Baking Powder
  • 3/4 Cup Lard
  • 1/2 Tsp Baking Soda
  • 6 Cups Flour
  • 1 Tsp Sea Salt
  • 2 Cups Buttermilk

Instructions

  • Preheat oven to 450 F
  • Prepare a sheet pan by lining it with a silicone pad
  • Flour a baking mat or baking board
  • Sift the flour (optional)
  • Whisk in to the flour the baking powder, baking soda and salt
  • Pour the buttermilk into the dry ingredients
  • Add the lard
  • Mix together with a spatula and then use your hands ( Do not over mix) only mix until you have all the ingredients incorporated and you can pick up the dough like a ball.
  • Lay onto the floured baking mat or board and flatten with your hands or a rolling pin to a inch to and inch and a half thick
  • Use a biscuit cutter if you want round biscuits or you can cut into squares
  • Place on the baking tray leaving room in between them so that they will crisp up around the edges
  • Brush the tops with a little buttermilk
  • Place the tray of biscuits on the top rack of the oven
  • Bake for 15 minutes keeping a close eye on them at the 12 minute mark- if they are getting dark on the bottoms remove them

Notes

In the video  I tried the silicone baking sheet and also tried parchment paper- do not use the parchment as the temps are too high.  I also used the top and middle racks I only recommend using the top rack. 
Pro Tip
Place an empty baking sheet on the rack below as it keeps them from getting too dark on the bottom.
We have made these thicker and cut them square. If you make them thicker the cook time increases to 15-20 minutes.
We also tried the temp at 425F rolled out to a medium thick (will post pic soon)
I love a good country ham biscuit with apple butter!
