Herb Roasted Chicken

Perfect Sunday dinner recipe as there is lot of left overs

Ingredients

  • 5 Lb Whole Chicken
  • 4 Tablespoons Butter softened
  • 1 Tablespoon Italian Seasoning
  • 2 Teaspoons Onion Powder
  • 2 Teaspoons Garlic Powder
  • Salt and Pepper to Taste

Instructions

  • Make sure to remove the giblets (it comes in a paper bag inside the chicken cavity). Add giblet to a small pot of water for gravy
  • Preheat the oven to 365 F.
  • Place the chicken in a roasting pan and pat dry with paper towels.
  • Rub the softened butter all over the chicken and get under the skin of the breast if you can.
  • Sprinkle on italian seasoning , garlic and onion powder and then the salt and pepper.
  • Tilt chicken up and sprinkle the salt in the cavity of the bird.
  • Bake for 20 min per lb or until internal temp is 165 degrees F.

Notes

 Tip When taking the temperature put through the leg into the thigh, don’t just test the breast meat
Let the chicken rest for at least 10-20 minutes before cutting into it…. enjoy!
