Ingredients
For The Bruschetta
6TomatoesRoma/ Diced
1/3CupBasilFresh
1/4CupParmigiano Reggiano
2ClovesGarlicminced
3TeaspoonOlive Oil
1TeaspoonSalt
1TeaspoonPepper
1Baguette Sliced and Lightly Toasted
For The Glaze
1/4CupBrown Sugar
1CupBalsamic Vinegar
Instructions
For The Glaze
Place the vinegar and sugar in a small saucepan on medium low heat bring to a simmer (not boil) and continue to stir for 5 minutes sauce will reduce and become thick. Remove from heat and cool before service.
For The Bruschetta
Dice your tomatoes and add to a bowl
Add minced garlic, olive oil, cheese and salt and pepper and mix
Stack basil leaves on top of each , roll together and thinly slice, add to your tomato mixture mix and refrigerate until ready to eat.
Slice your bread place on a sheet pan and toast slices LIGHTLY under broiler
Place bread slices on a plate/platter and add 1-2 Tbsp of tomato mixture on each peace of toasted bread and drizzle the cooled balsamic glaze on each peace.

This dish serves perfectly with Cheese, Olives, Pickled Veggies or mixed plate of meats; Salame, Prosciutto etc.
