Stuffed potatoes are are a great idea for dinner or as a side dish. Creamy and filling these are perfect on a cold evening.

Ingredients
1Baking PotatoRusset
3Oz.Velveeta Cheese
2Teaspoonsmilk
1Tablespoon CheddarShredded
½Cup BroccoliCan use frozen
1PinchBlack Pepper
Instructions
Wash and scrub the potato with water and a rough cloth or scrub brush.
Wash and cut broccoli into bit sized spears
Prick the potato with a fork multiple times.
Place a piece of aluminum foil on the bottom rack of the oven.
Bake the potato in a preheated oven directly on the top rack at 350-375 degrees F (375 will give you a crispier skin). 60 minutes or until the potato is soft inside. (This will depend on the size of your potato)
Keep the potato warm until the cheese is ready.
Microwave the broccoli until it is fork-tender.
In a bowl, add cheese and milk and microwave for 1 minute.
Add broccoli to the cheese mixture and cook for another 1 minute.
Cut the potato and pour the broccoli cheese mixture on top.
Notes
Great dorm room recipe -simply replace the use of the oven with a microwave. Use the frozen broccoli.
