Bacon Wrapped Pineapple Bites

Ingredients
- 2 Cups Pineapple Fresh
- 1 Cup Brown Sugar
- 1/2 lb Bacon
Instructions
- Gather your ingredients
- Preheat your oven to 375
- Line the baking rack with aluminum foil
- lay a cooling rack onto the baking sheet
- Wash core and cut the fresh pineapple into bite sized cubes
- Add brown sugar to a bowl
- Cut the bacon in half or quarters depending on the size of your bites. You want to make sure the bacon wraps all the way around the pineapple bite.
- You can dip the bacon wrapped pineapple into the brown sugar before securing with the toothpick or after whichever you feel the most comfortable with
- Lay the secured bites onto the rack
- Cook for 30 minutes them turn the oven to broil for 3 - 4 minutes more until the bacon is browned to your liking

Notes
Variation: We made these also in the convection oven and they cooked in less than half the time without any need to broil. We will add that recipe the next time we make them.Â
Tip: Save yourself some time and wash slice and chunk your pineapple up to a day before. Store in an airtight container in the fridge until ready to use.Â
