- 45 Oz Cannellini Beans canned
- 4 Oz Pepper Jack Cheese Cubed
- 4 Oz Salami Diced
- 1 Cup Cucumber Diced
- 1/2 Cup Bell Pepper Diced
- 1/2 Cup Onion Diced
- 1/2 Cup Tomato Diced
- 1/2 Cup Celery Diced
- 1/2 Cup Extra Virgin Olive Oil
- 1 Tbsp Dijon Mustard
- 2 Tbsp Lemon Juice Fresh
- 1 Tsp Garlic Minced
- 1 Tsp Oregano Dried
- Salt & Pepper Pinch
- 1/4 Cup Carrot Diced
Drain and rinse beans then add to mixing bowl
Dice the cheese
Dice veggies,& meat into small bite sizes (size of the bean) then add to beans
Mix olive oil, mustard, lemon juice, garlic, oregano, salt and pepper in bowl and mix then pour and mix over bean mixture
Serve over a bed of lettuce
Any white bean can be used Cannellini, Northern White Bean, White Kidney etc.
