White Bean Salad

This high protein and salad is perfect for lunch or a snack and will leave you filled and satisfied

Ingredients

  • 45 Oz Cannellini Beans canned
  • 4 Oz Pepper Jack Cheese Cubed
  • 4 Oz Salami Diced
  • 1 Cup Cucumber Diced
  • 1/2 Cup Bell Pepper Diced
  • 1/2 Cup Onion Diced
  • 1/2 Cup Tomato Diced
  • 1/2 Cup Celery Diced
  • 1/2 Cup Extra Virgin Olive Oil
  • 1 Tbsp Dijon Mustard
  • 2 Tbsp Lemon Juice Fresh
  • 1 Tsp Garlic Minced
  • 1 Tsp Oregano Dried
  • Salt & Pepper Pinch
  • 1/4 Cup Carrot Diced

Instructions

  • Drain and rinse beans then add to mixing bowl
  • Dice the cheese
  • Dice veggies,& meat into small bite sizes (size of the bean) then add to beans
  • Mix olive oil, mustard, lemon juice, garlic, oregano, salt and pepper in bowl and mix then pour and mix over bean mixture

Notes

Serve over a bed of lettuce
Any white bean can be used Cannellini, Northern White Bean, White Kidney etc.
