Traditional Garden Tomato Salsa

This salsa always gets big kudos when I serve it at a gathering. It tastes so fresh however not every ingredient has to come from the garden to make this salsa seem like you slaved over it for hours.

Equipment

Ingredients

  • 42.5 Oz. Diced Tomatoes Canned
  • 3 Roma Tomatoes (optional) Seeded
  • 1/2 White Onion small
  • 3-4 Green Onions cut, no white ends
  • 1 Poblano Pepper Freshchopped fine
  • 1 Jalapeno Pepper Fresh (optional) seeds and strings removed
  • 1 Green Bell Pepper Small chopped fine
  • 1.5 Tbsp Picked Jalapeno Peppers chopped fine
  • 1 Tbsp Jalapeno Brine You can add more depending on taste
  • 1 Cloves Garlic
  • 1 Tablespoon Lime Juice Fresh/ 1/2 of a juicy lime
  • 1 Tablespoon Hot Sauce (optional)
  • 1/4 Teaspoon Cayenne Pepper add more for heat to taste
  • 1/2 Teaspoon Salt add more to taste
  • 1/8 Teaspoon Ground Cumin
  • 1/8 Teaspoon Garlic Salt
  • 1/8 Teaspoon Onion Powder

Instructions

  • Gather your ingredients
  • Wash all the fresh vegetables
  • Open the cans of tomatoes and add to them to the bowl
  • If using the optional fresh Roma tomatoes cut into small pieces and remove the seeds and add them to the bowl
  • Put on a pair of gloves before handling peppers
  • Mince the Poblano peppers (and the optional fresh jalapeno peppers if using)
  • Add the peppers to your bowl
  • Mince the onion and add it to the bowl
  • Mince your garlic and add it to the bowl
  • Chop the green onion and add it to the bowl
  • Chop the cilantro and add it to the bowl
  • Slice the picked Jalapeno peppers and add them to the bowl
  • Add the Jalapeno juice, the hot sauce, and squeeze half the lime
  • Add the garlic salt, salt, onion powder, cayenne, and cumin
  • Mix all ingredients in the bowl.
  • Taste and make any necessary adjustments
  • Chill for at least 2 hours.

Notes

The hack is to use mostly canned tomatoes however chop up a few seeded Roma tomatoes and add them in.  We also use canned pickled jalapeno peppers and a little bit of the pepper juice to add in acidity. 
Taste after it is chilled. You can always add more cayenne pepper and salt if needed. If it is too hot you can add more fresh lime juice or more tomatoes
