Spinach Artichoke Stuffed Chicken Breast
Creamy and full of spinach and cheese these chicken breast will turn an ordinary meal into one that you will want to make over and over. Served on a bed of mashed potatoes this dish screams comfort.

- 6 Chicken Breast Whole
- 1/4 Tsp salt & pepper
- 1/4 Tsp Paprika
- 1 Tsb Olive Oil
The Stuffing
- 5 Oz Spinach Leaves or 10 Oz of frozen
- 10 Oz Marinated Artichoke Hearts
- 1 Garlic Clove
- 1 Cup Mozzarella Cheese Can use Asiago
- 1/4 Cup Cheddar Cheese
- 1 Tsp Worcestershire
- 1/2 Tsp Cayenne
- 1/2 Tsp Tabasco Sauce
- 1/4 Tsp Garlic Powder
- 1/4 Tsp Onion Powder
- 1/4 Cup Sour Cream
- 1/4 Cup Mayonnaise Can use Plain Greek Yogurt
- 8 Oz Cream Cheese
The Chicken
Lay your whole chicken breasts flat and cut a slit in two places in order to open up the breast enough to place the stuffing. Lay any excess chicken meat into the breast opening. Your breast should be open 3/4 of the way leaving the end pieces intact.
Scoop approximately a 1/2 cup of the stuffing into the cavity of each breast
Sprinkle the breasts with salt, pepper and a little paprika
Bake for 25 minutes or until the internal temperature of the chicken reaches 165 F
We served our over a bed of homemade mashed potatoes and it was a big hit
