So Yum Pumpkin Pancakes

You do not have to wait until Autumn to enjoy these delicious pumpkin pancakes. They are fantastic almost anytime of the year. Pumpkin is a good source of antioxidants and is rich in vitamins and minerals.

Equipment

  • 1 Ladle
  • 1 Griddle A large frying pan can be substituted
  • 2 Spatulas One rubber spatula for mixing and one for flipping

Ingredients

Dry Ingredients

  • 2 Cups Flour
  • 1 Tsp Salt
  • 3 Tsp Baking Powder
  • 1.5 Tsp Cinnamon
  • 1 Tsp Nutmeg
  • 1 Tsp Ginger

Wet Ingredients

  • 1 Cup Canned Pumpkin
  • 1/2 Cup White Sugar
  • 1/2 Cup Brown Sugar
  • 2 Ea Eggs
  • 4 Tbsp Butter
  • 1 Tbsp Vanilla
  • 1.5 Cups Milk

Instructions

  • Place the flour into a mixing bowl
  • Add the baking powder
  • Add the salt and spices
  • Whisk them together
  • Melt the 4 tablespoons of butter for 30 seconds or less in the microwave and set aside
  • In a separate mixing bowl add all the wet ingredients
  • Add the butter last so that you do not cook your eggs
  • Mix with a rubber spatula
  • Add the wet ingredients into the dry ingredients and mix just until it is incorporated. Do not over mix, lumps are okay.
  • Preheat your griddle to approximately 300 F. If you are using a large frying pan use medium heat.
  • Spray the hot griddle or pan with cooking spray
  • Using a ladle scoop batter and drop onto the heated surface. You can decide at this point what size your cakes will be. A whole scoop will make large vs a half scoop etc..
  • Let them begin to bubble before flipping. This is the secret. If you have the pan at the proper temperature your cakes will brown perfectly before needing to be flipped.
  • You know they are ready to flip when the get bubbly in the middle.
  • Flip and let brown on the other side. Once they are at the desired darkness they should be fully cooked on their insides.
  • Move onto a plate, If you want to keep them warm place into a 200F oven and hold until serving.
  • You can sprinkle with some powdered sugar optional

Notes

You can make variations of these cakes by adding chocolate chips or nuts. 
We like to serve with butter and maple syrup
