Raspberry Yogurt Cup
We purchased a pints of fresh raspberries and cooked them down into a sauce. This allowed me to make the most of these delicious red berries. For this dish I mixed a little bit the sauce with some plain greek yogurt to add sweetness and color. Them sprinkled some homemade granola and added a a fresh berry on top.

The Raspberry Puree
- 1 Pint Raspberries
- 3 Tsp Sugar
Assembling The Cup
- 3/4 Cup Greek Yogurt
- 2 Tbsp Granola
- 1 Raspberry
The Raspberry Puree
Wash the raspberries
Add them to the saucepan
Add the sugar
Cook on high to a full boil then reduce the heat to med low
Mash the berries a bit to help them cook
Cook for 10 minutes stirring occasionally
Add some ice to a low rimmed bowl and add water
When the pan is cool to the touch your puree should be cool enough to add to the yogurt
Assemble The Cup
Add your yogurt to your bowl
Swirl in the raspberry puree
Sprinkle the granola on top
Add a raspberry for garnish if you like
