Raspberry Yogurt Cup

We purchased a pints of fresh raspberries and cooked them down into a sauce. This allowed me to make the most of these delicious red berries. For this dish I mixed a little bit the sauce with some plain greek yogurt to add sweetness and color. Them sprinkled some homemade granola and added a a fresh berry on top.

Equipment

  • 1 Mason Jar To store any extra raspberry puree

Ingredients

The Raspberry Puree

  • 1 Pint Raspberries
  • 3 Tsp Sugar

Assembling The Cup

  • 3/4 Cup Greek Yogurt
  • 2 Tbsp Granola
  • 1 Raspberry

Instructions

The Raspberry Puree

  • Wash the raspberries
  • Add them to the saucepan
  • Add the sugar
  • Cook on high to a full boil then reduce the heat to med low
  • Mash the berries a bit to help them cook
  • Cook for 10 minutes stirring occasionally
  • Add some ice to a low rimmed bowl and add water
  • When the pan is cool to the touch your puree should be cool enough to add to the yogurt

Assemble The Cup

  • Add your yogurt to your bowl
  • Swirl in the raspberry puree
  • Sprinkle the granola on top
  • Add a raspberry for garnish if you like
