Pork Belly Burnt Ends

- 2 Lbs Pork Belly
- 1/4 Cup Rub
- 1/4 Cup BBQ Sauce
Prepare your smoker, heat your coals to 250 F we added a little applewood for the smoke flavor
Remove your pork belly from the packaging and set on a cutting board
Cut the pork belly into bite sized squares
Generously sprinkle the rub onto all sides of the meat
Cook on the smoker at 250 degrees for 3 hours
At the three hour mark, baste with some bbq sauce
Put back on the smoker and cook for one more hour
Preparation: I'll show you how I cut the pork belly into 1-inch squares and season them with my homemade rub. Smoking: Using apple wood and lump charcoal, I get the smoker started and bring it up to the right temperature. Cooking: I cook the pork belly bites at around 250°F for about 3 hours, ensuring they absorb all that lovely smoke. Saucing: In the final hour, I add BBQ sauce to the pork belly bites to give them an extra layer of flavor and a nice crust. Tasting:
