Meatballs

This meatball recipe can be made with beef, turkey or a combination of both.  Meatballs can be baked or fried depending on your preference. They can be eaten with a variety of sauces, be served on top of pasta, in sandwiches, right from a crockpot as an appetizer or even in soup or salad. The versatile meatball is what we love!
It is a kid-friendly dish to make with your children, The kids often enjoy mixing with their hands and rolling the meat into little balls.

Ingredients

  • 1 lb Ground Beef or Turkey or a Mix of Both
  • 1/4 Cup Bread Crumbs Italian
  • 1/2 Cup Grated Cheese Parmigiano Reggiano is what I use
  • 2 Eggs
  • 1 Tbs Minced Garlic
  • 2 Tbs Parsley
  • 1/4 Onion medium sized- minced
  • 1/8 Tsp Salt
  • 1/8 Tsp Black Pepper

Instructions

Frying Method

  • Mix all ingredients together except the oil
  • Form the meatballs as close to the same size as you can, this will help in timing the cooking and also look best in your dish.
  • If you are frying heat the oil in a skillet over medium heat and add the meatballs so that they touch, but are not crowded.
  • Turn with a spoon to brown evenly. If you are cooking the meatballs further such as in a sauce you only have to cook until lightly browned and so they do not fall apart when you touch them.
  • If you plan to eat them right away or not planning to cook further make sure you have cooked completely testing with a meat thermometer or by cutting one open.

Baking Method

  • Preheat your oven to 350 degrees F
  • Line a baking sheet with parchment or a Silpat
  • Place the meatballs apart from one another to give them some room to brown
  • Cook for 15 to 20 minutes or just until your meatballs are cooked all the way through. This will vary based on size.

Notes

If you are frying you must have vegetable oil and calculate that into the nutritional information.
Tip: for more tender meatballs the less you mix and roll the better they will be.
