Holiday Chicken Salad Gift Box
I can not tell a lie, this was an amazing appetizer that a friend made and I just had to have it in our blog for the Christmas holiday. Not only did it look gorgeous it tasted fabulous as well! This is guaranteed to be a hit at your next Christmas gathering.

- 1 Chicken Breast
- 2 8 Oz. Cream cheese room temperature
- 1/2 Cup Onion finely chopped
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Salt
- 2 Cups Pecans finely chopped
- 12 Red Grapes quartered
- 5-6 Green Onions scallions
- 5 Cherry Tomatoes or Grape Tomatoes
Cook the chicken breast in the Instant Pot 25 minutes on manual
Chop up the cooked chicken
Mix together chicken, cream cheese, onion or onion powder, garlic powder, salt, and 1/2 cup of chopped pecans in a medium mixing bowl.
Fold in the grapes
Line a Loaf pan with Plastic wrap and press the mixture into the pan
Pour chicken cheese mixture into the pan . Using plastic wrap, press chicken cheese mixture tightly forming a rectangle.
Wrap with plastic wrap and store in the refrigerator for 1 hour up to 3 days before serving.
Before serving blanch the green onions so that they are pliable and you can fold them around also this makes them the bright green color you see in the photo.
Turn your chicken cheese mixture over out of your loaf pan and cut it down the middle so you have two squares.
Move your square to the plate you intend to serve from and wrap the green onions around it like a bow and add the 5 tomatoes to the top
Serve with water crackers
