Easy Chicken Quesadillas
This is a simple and easy recipe because it only has three- steps. If you have prepared your filling ahead of time. If not, don't worry we will show your the steps for that also. Either way, get an easy meal on the table in minutes. Add salsa or or other topping of your choice.

- 3 Flour Tortillas
- 1 Tbs Butter
- 1 Cups Shredded Cheese Monterey Jack or Cheddar
- 1.5 Cups Chicken Dark or White
- 1/2 Cup Peppers
- 1/2 Cup Onions
- 1/4 Cup Cilantro Optional
- 2 Tbs Olive Oil
Slice your chicken into bite sized chunks
Add a tablespoon of oil to a frying pan place on medium high heat
When pan is heated drop the chicken chunks
Saute the chicken until almost brown
Add another tablespoon of oil to the frying pan once heated add the peppers and onions
Once the peppers and onions are soft and chicken has reached an internal temperature of 165F remove them all to a bowl and set aside. (You can do all the previous steps a day or two ahead of time or at the time you are planning to serve the quesadillas)
Heat a pan on medium heat and add the butter,
Place the flour tortillas on the melted butter and move all around in the pan to cover the bottom.
Add the cheese on top of tortilla
Add the filling on ½ of the tortilla on top of the cheese. Cook on medium heat for 4 min.
Fold the tortilla and cook on both sides for the desired color
Slice and serve with your favorite topping
