Ingredients

For The Chicken

  • 3 Ea Chicken Breasts Split in half
  • 2 Cups Bread Crumbs Panko
  • 1 Cup Flour
  • 2 Ea Egg
  • Oil for frying
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1/2 Tsp Salt
  • 1/2 Tsp Pepper
  • 1/4 Cup Milk

For The Cheese Mixture

  • 1 Cup Ricotta Cheese
  • 1/2 Cup Parmesan Cheese Grated
  • 1 Tbsp Parsley Chopped
  • 1 Tsp Garlic Powder
  • 1 Tbsp Italian Seasoning
  • 1 Tsp Onion Powder
  • 1/2 Tsp Salt
  • 1/2 Tsp Black pepper

For The Dish

  • 30 oz Ziti Cooked
  • 2 Cups Mozzarella Cheese
  • 6 oz Fresh Mozzarella Sliced
  • 20 Oz Marinara Sauce

Instructions

For The Chicken

  • Set up a dredging station; mix flour and seasoning together, in another dish add your eggs and milk together & whisk and lastly another container for your bread crumbs
  • Make sure you chicken cutlets are thin if you need to pound out a little, do so. Place the chicken breast in flour then egg then bread crumb coating each side in the process.
  • Fry the chicken breasts in oil until golden and cooked through.

For The Pasta

  • Cook the ziti pasta until al dente; drain and.set a side and mix with 1 tsp of oil to keep it from sticking.

For The Ricotta Cheese Mixture

  • Add Ricotta cheese to a bowl, garlic, onion, parsley and more salt and pepper and mix together

Assembling The Dish

  • Preheat the oven to 400 degrees
  • Place 1/2 of the pasta in a baking dish.with 1/2 of the marinara and mix together
  • Add spoon fulls of the Ricotta mixture on top until its all gone, no need to spread
  • add a Layer of mozzarella cheese on top and repeat the process, add other half of your ziti on top and marinara on top
  • Lay the cooked chicken cutlets on top and sprinkle around the cutlets with remaining shredded mozzarella.
  • lay slices of fresh mozzarella on top of the chicken Sprinkle with parsley or fresh basil and bake on 400 degrees until bubbly and golden brown.
