Ingredients

  • 2 Cups of Basil
  • 2 Roma Tomatoes Diced, Minced, or Processed
  • 1 Cup of Gouda Cheese Finely Shredded
  • 1 Clove of Garlic (Optional)
  • 1/4 Cup of Olive Oil
  • 1/4 Teaspoon of Salt

Instructions

  1. Deseed the tomatoes and discard the seeds
  2. Mince or grate the clove of garlic do not depend on the food processer to mince it fine enough
  3. Add all ingredients to the food processer and pulse for 2-3 seconds

Pesto, Pistou, and Chimichurri Sauces

Green sauces are my favorite of mine as they add freshness and texture to almost any dish. For years I have been making and serving a chimichurri sauce that my amazing chef friend, Ana Claudia Tapioca, taught me. I add chimichurri to my menu when serving empanadas, beef, pork or chicken. My dinner guests always compliment the sauce and it is really simple to make.

The idea for writing this article came from another talented chef friend, Preeti Waas. I was confiding in her that I was running out of ideas for our March issue. I already had many articles talking about Irish traditions and Irish food, however, not everyone celebrates Saint Patricks Day or happens to be Irish. I wanted to stay true to the magazine’s March theme but also wanted to include some not-so-Irish food articles. Preeti thought about it for a quick second and suggested ,why not make these three green sauces and talk about their differences. Did I mention she is brilliant?

Pesto verses Chimichurri verses Pistou

  • Pesto, originating from Italy, combines fresh basil, pine nuts, garlic, Parmesan cheese, and olive oil to create a vibrant and aromatic sauce.
  • Chimichurri, hailing from Argentina, features a blend of parsley, garlic, vinegar, and spices, typically with the addition of red pepper flakes for a slight kick.
  • Pistou, a traditional French sauce, showcases the simplicity of basil, garlic, and olive oil, often without nuts or cheese.

While all three sauces share a common thread of herbal freshness, they offer unique flavor profiles that can elevate various dishes, from pasta and grilled meats for pesto and chimichurri, to soups and stews for pistou.

The Pistou

I made all three sauces, documented the process and (as always) subjected my husband to the taste test. I had never tasted Pistou, a French sauce that is typically served on top of a hearty vegetable stew. I was not sure I would like this sauce. WOW, was I wrong?

The Pistou is made using Gouda cheese and tomato along with fresh basil. While I had not made a stew on the day I documented this, I did have a loaf of crusty french bread.

I drizzled olive oil on some sliced bread popped in the oven for 4 minutes and then added the Pistou sauce. Placed it back in the oven for 4 more minutes and it turned out delicious. I cannot wait to make a grilled cheese sandwich this same way! I also could imagine this sauce spooned onto the top of a bowl of homemade tomato soup, Yum!

The Pesto

Next up was the Pesto. This traditional sauce is made also from basil. The Italians add pine nuts and garlic along with parmesan and or romano cheese. I did not have pine nuts on hand so I substituted walnuts, this worked out just as well.

Walnuts are easy to find in the area where I live and are much less expensive. It did not compromise the flavor of the Pesto and I may have preferred it, I will have to compare them side by side one day to confirm for you. Pesto can be served over pasta, chicken and even on pizza. As you may have guessed, I used that same toasted, crusty French bread as a vessel for this nutty, green sauce. It was also scrumptious.

The Chimichurri

Finally, the third green sauce was Chimichurri. Just as much fun to say as it is to eat. I do use Ana’s recipe as a guide but I do not stick to any one recipe. I am an out of the box cook who likes to experiment with flavors, amounts, technique, and truth be told I rarely measure.

I find that having to write the recipes down is one of the most difficult parts of documenting my cooking. I learned that by filming myself I can accurately count the measurements I made. I then can utilize the videos elsewhere. Filming yourself doing anything comes with its own set of challenges and I will confide that sometimes I have more bloopers that get edited out than actual usable content.

What makes the Chimichurri green and fresh is cilantro, basil, and garlic. Add into this some acid from the lemon, lime and or red vinegar and some olive oil. Sometimes I add a little red onion, other times I leave it out depending on what I am planning to serve it with. Red onion with beef adds to the dish, but I do not find with pork that I need the onion.

Today I planned to serve the sauce with an air fried pork chop so the red onion was omitted. I do not recommend serving the Chimichurri on top of the crostini, it does not translate as well as the Pistou and Pesto. With the pork chop though it added a nice freshness, acidity, and garlic flavor that accompanied it well and really made the meat sing.

Whether you are planning to celebrate March with the Irish or you want to add a bit of brightness to a meal. you can enjoy these flavors all year long. These easy to prepare sauces will help bring out the best in most anything you plan to serve.

Dijon Mustard Sauce

I serve this sauce with Crab Cakes, Turkey Burgers, Spinach Balls, Chicken Tenders and more. This is an easy sauce to make and adjust based on how you prefer the taste. Some people like it a bit more tart and others like it sweeter.

The recipe below is a basic version that will not disappoint, but the fun of this sauce is really experimenting with it until you find your happy place.

  • 2 Tablespoons Mayonaise
  • 1 Teaspoon of Dijon Mustard  (Grainy mustard can be used but you may have to adjust other ingredients to gain more sweetness)
  • 1 Teaspoon of Balsamic Vinegar
  • 1 and 1/2 Teaspoons of Sugar ( Honey may be substituted for sugar)
  • 1/2 Tablespoon of Olive Oil
  1. Mix all the ingredients together.
  2. If using sugar, let the sauce sit for 30 minutes or more before serving. 
Chimichurri Opt

This is a fabulous sauce to add to almost any lean meat, such as pork tenderloin, chicken breast or a filet mignon. I have tasted and made Chimichurri several different ways and each one is delicious in its own right.
The most popular version involves parsley, cilantro, and garlic mixed with garlic, salt, and olive oil drizzle vinegar or lemon juice into the mix and you have a fresh, bright spring/summer Chimichurri.

Ingredients
  

  • 1/2 Cup Cilantro
  • 1/2 Cup Parsley
  • 1 Clove Garlic
  • 1/3 Teaspoon Salt
  • 1/3 Cup Olive Oil
  • 1/4 Cup Lemon Juice Vinegar, or Cider
  • 1 Teaspoon Minced Red Onion optional
  • 1/2 Teaspoon Red Pepper Flake optional

Instructions
 

  • Finely mince all the herbs.
  • Minced or grate the garlic.
  • Add in the salt, olive oil, and lemon juice, or vinegar, or cider.
  • Serve while it is fresh.

Notes

You can add more lemon juice, vinegar, or cider depending on the consistency you are looking for.
You can modify with some red pepper flake if you want to add in some heat. We have also tried it with a bit of minced red onion.
A chef friend told us we could also make a fall Chimichurri sauce using rosemary, thyme, and sage. we will have to try that one out and let you know.

Herb Butter Sauce

This lovely compound butter can be served room temperature or heated.  At room temperature, it is a wonderful spread and heated it becomes a lovely sauce. 

  • 3/4 Stick of Salted Butter (softened)
  • 1 Tablespoon of Fresh Rosemary (minced)
  • 3 Tablespoons of Fresh Parsley (minced)
  • 1 Tablespoon of Fresh Basil (minced)
  • 1 Clove of Garlic
  • 1/4 Teaspoon of Salt
  • 1/4 Teaspoon of Lemon Juice
  1. Mix together.
  2. Apply when your steak is still hot it will melt all over. Yum!

If doing a reverse sear on a steak

  1. Simply rub onto the steak just before the sear and it will help it to brown and crisp up nicely.
opt jalapeno cream Sauce

Jalapeño Cream Sauce

  • 1/2 Stick of Butter
  • 2 Tablespoons of Flour
  • 2 -3 Jalapeno Peppers (sliced and chopped, seeds and strings removed)
  • 2-3 Tablespoons of Cream Cheese
  • 1 Chicken Stock Cube and 1/2 Cup of Water or 1/2 Cup of Chicken Stock
  • 1/4 Teaspoon of Chili Powder
  • 1 Teaspoon of Lime Juice
  1. Add the butter to the pan.
  2. Add the Jalapenos to the pan.
  3. Stir in the flour.
  4. Add in the Cream Cheese.
  5. Add the Stock or Stock Cube with Water.
  6. Stir until creamy and mixed well.

Kiev Sauce

Chicken Kiev Sauce

This sauce has been used mostly in our recipes for chicken however, this is a versatile sauce that could be used in a variety of dishes.  The Kieve sauce is very much like a scampi sauce so it would pair well shrimp, lobster, scallops or other fish.

  • ½ of a White Onion
  • 1 Bunch of Scallions/Green Onions
  • 4 Garlic Cloves
  • 1 Cup of White Wine
  • 1 Stick of Butter
  • Salt and Pepper to Taste

Variations: Add Tarragon or Red Pepper Flake

  1. In a small saucepan, add butter until melted, then add onion, until translucent.
  2. Add the garlic, and green onion/scallions.
  3. Cook for 5 minutes, add white wine and cook for another 5-7 minutes.
  4. Add salt and pepper to taste.

Buffalo Sauce

When you think of buffalo sauce usually the first thing that comes to mind is wings, however this sauce is more versatile. Try adding it to grilled or fried shrimp or perhaps with some shredded chicken. You can make lettuce wraps with the chicken or shrimp or put it inside slider buns. Don’t forget that buffalo chicken dip is always a party favorite.  Some people even add it to roasted cauliflower ( I may have to try that for a healthier option). 

  • 1 Half Cup of Your Favorite Hot Sauce ( I use Franks Red Hot) 
  • 1 Stick of Butter
  • 1/4 Teaspoon of Worcester Sauce (Optional) 
  • 1/4 Teaspoon of Vinegar (Optional) 
  1. Melt the butter in a small saucepan over medium low heat
  2. Add the hot sauce, bring to a boil and lower heat to low until ready to pour
