Pickled Green Tomatoes
Green tomato recipes are mostly battered and fried. We pickle them for a surprising zesty addition to a sandwich or burger.
Ingredients
- 2 Cups Cut Green Tomatoes Remove stems
- 4 Cloves Garlic Peeled but Whole
- 1/4 of an Onion Whole
- 1 Tablespoon Sea Salt or Kosher salt
- 1/4 Teaspoon Mustard Seed
- 1/4 Teaspoon Fennel Seed
- 1/8 Teaspoon Celery Seed
- 1 Cup White Vinegar
- Water to fill the Jar
Instructions
- Wash and slice the green tomatoes and add them to a Mason jar
- Peel and slice the onion and add it to the jar
- Peel the garlic and add the cloves to the jar
- Add the salt and spices
- Add the vinegar
- Add the water to cover the tomatoes
- Seal the jar and shake it
- Refrigerate for a few days these will get better over a week
- Can keep for up to 3 weeks in the refrigerator
