Fresh Field Pea Salad

  • 16 Ounces of Fresh Field Pea Greens (I found these at Earthfare) 
  • 2-3 Radishes (chopped)
  • 1 Small Summer Squash (chopped)
  • 1/2  Small Red Onion (Sliced thin)

Champagne Vinaigrette Recipe

  • 1 Garlic clove (finely chopped)
  • 2 Tablespoons of Dijon Mustard
  • 1/4 Cup of Champagne Vinegar
  • 2 Tablespoons of Fresh Lemon Juice
  • 2 Tablespoons of Honey
  • 2 or 3 Dashes of Hot Sauce
  • 1/2 Teaspoon of Salt
  • 1/2 Teaspoon of Freshly Ground Black Pepper
  • 1/2 Cup of Extra Virgin Olive Oil

Add all ingredients to a bowl and lightly toss with the champagne vinaigrette.
