Fresh Field Pea Salad Ingredients 16 Ounces of Fresh Field Pea Greens (I found these at Earthfare) 2-3 Radishes (chopped)1 Small Summer Squash (chopped)1/2 Small Red Onion (Sliced thin)Champagne Vinaigrette Recipe1 Garlic clove (finely chopped)2 Tablespoons of Dijon Mustard1/4 Cup of Champagne Vinegar2 Tablespoons of Fresh Lemon Juice2 Tablespoons of Honey2 or 3 Dashes of Hot Sauce1/2 Teaspoon of Salt1/2 Teaspoon of Freshly Ground Black Pepper1/2 Cup of Extra Virgin Olive Oil Instructions Add all ingredients to a bowl and lightly toss with the champagne vinaigrette.Enjoy!
